Mission Statement & Goals 

The mission of the Cheese Education Committee of the ACS is to support artisan cheesemaking by fostering cheese education and by developing a Cheese Certification Program.

 

Our goals include:

 

Recognize Cheese Education as a core function of the ACS

  • Continue to develop content for an Education section on the ACS website.

 Facilitate the availability of educational resources to the cheese community:

  • Develop a network of education programs whose course content prepares candidates for eventual certification. 
  • Identify existing programs
  • Work with educators to develop a common, basic master syllabus
  • Encourage the development of new programs (The Committee does not intend to become a teaching organization; rather a clearinghouse and networking organization.)

 Develop a certification program:

  • Create an examination or series of examinations that will measure cheese knowledge needed by all those who handle cheese in its journey from the cheesemaker to the consumer 
  • Enroll partner organizations for funding and marketing
  • Administer the exams
  • Score, record, and report the results
